I’ve been married for over 10 years and every year this is my wife’s birthday meal request (even when we go out for dinner on the day). I blend an Asian tangy marinade with fresh scallops and Langoustines (jumbo shrimp) then serve that over lemon risotto and viola!

Ingredients:
King Scallops (3-4 per person)
Langoustines (Squat Lobster – 2 per person)
Garlic
Ginger
Chilli
Ghee (or butter)
Lemon Risotto

Notes:

We prefer this served with samphire when it is in season but fresh spinach with garlic and lemon does the trick!
